Black Bean and Corn Stuffed Peppers with Roasted Cauliflower, Millet and Jalapeno Cashew Cream

Bhindi Masala or Okra Curry
Last round of this season's small tender okra and probably the next to last round of decent tomatoes. Wanting to celebrate the fresh ingredients, I tried out Vegan Richa's very simple Bhindi Masala recipe and really enjoyed the delicate flavor.
